Holly grew up in Grand Rapids, Michigan. As a teenager she worked her way through high school as a busser at an Italian restaurant. Combining her desire to travel with her new found serving skills, she set out to explore new cities. From 1999 to 2001, she stayed in Colorado Springs, where she worked at Trattoria DeAngelo, a popular calzone spot. From there it was off to Seattle to further hone her expertise. She eventually landed at Lark, where she worked with James Beard award winner John Sundstrom. It was here that Holly realized that well informed and professional service can be and should be executed without pretension. In the summer of 2007, she relocated to Portland in search of new professional challenges and a house she can afford. She succeeded in finding a challenge in her new role as assistant manager at Park Kitchen. The house, well, that is yet to be determined. Stay tuned.
